Bordeaux chateaux boycott Chinese names poster

Christie’s China has become embroiled in a ‘misunderstanding’ with Bordeaux over translations of chateau names into Chinese.


Last week Christie’s announced it would publish a poster showing Chinese names for nearly all the 61 chateaux of the 1855 classification.


Although this is not the first time it has been done – Ch’ng Poh Tiong, Decanter columnist and publisher of the Singapore Wine Review, set up a phonetic translation system in 2008 – Christie’s head of wine for China, Simon Tam, implied it was official, with written approval from all but a handful of properties.


Now the Conseil des Grands Crus Classés en 1855, as well as a number of chateaux, are refusing to have anything to do with the poster, claiming they did not approve the translations.


The issue of trademarks in China is fraught with pitfalls, they say, with many names awaiting approval from the Chinese authorities.


‘This is a very sticky subject at the moment, and no one has the right to officially make any statement until all our requests and the registration have been confirmed by the Chinese office of trademarks,’ Philippe Delfaut, managing director of Chateau Kirwan told Decanter.com.


Delfaut has boycotted the poster, and Sylvain Boivert, director of the 1855 Classification, told Decanter.com he had the names of at least 17 chateaux that had not given their approval.


Boivert also said the 1855 had given approval ‘for the [Christie’s] catalogue, not for the poster’.


Speaking from Singapore, Tam insisted he had never said this was an official translation.


Moreover, he said, the situation was 'a misunderstanding' due to the fact Christie’s had appended the Chinese characters for the word ‘chateau’ to the approved names, making them two to three characters longer and therefore unfamiliar.


Corinne Conroy, marketing director at Chateau Brane Cantenac, accepted this explanation but said, ‘Nonetheless, we did not wish for the name to look longer. On the contrary, we have been advised by our various importers to keep our Chinese name as short as possible so that it would be easier for the customers to read and remember. This is why we chose the three-character translation that I recommended.’


Tam told Decanter.com he appreciated it is ‘a touchy subject’ but he would not withdraw the poster, of which 500 had been printed to be distributed to the chateaux for en primeur week on 1 April.

Bordeaux's classified growths have approved the first-ever standardised Chinese translation of their names, Decanter.com can exclusively reveal.

Auction house Christie's has unveiled an official translation of each of the 61 chateaux in the 1855 classification, after 12 months of collaboration with the Medoc estates.


Simon Tam, head of wine, China, for Christie's told decanter.com: 'We have written confirmation and agreements from all but three or four chateaux that these Chinese translations are the agreed names for the whole Chinese speaking world.


'We are trying to make wine as accessible as possible for our clients. Language is the first barrier and we are trying to break down those barriers,' he added.


Christie's staff have worked with chateaux to agree on Chinese translations for their estate while others already had Chinese names. However, some chateaux including Cos d'Estournel have opted not to take a Chinese name.


The Chinese translations have been published on a poster, which will be unveiled to the Bordeaux trade during the 2012 En Primeur week.


The posters will also be distributed to Chinese clients and journalists 'to ensure the chateaux will be referred to properly,' said Tam.


It is too early to tell whether the names will be embraced by other auction houses and the wider wine trade but Tam added, 'I would like to think that the hard work has been done, and it will be adopted widely.'



Christie's hopes to produce similar translations for producers in Sauternes, Bordeaux's right bank and Burgundy in the future.

由街上拾牠們回家那天開始,我已承諾如何艱難我都會好好照顧至牠們終老,
雖然收入有限,牠們食的不是最好,享用的不是最美,
但也總比流落街頭,三餐不計,或受虐打好過吧!


可惜上天沒有眷顧我們,年尾我因長期勞損導致肩背肌肉拉傷,
簡單的肢體活動都令傷患疼痛不已,就連普通的日常家務也難於應負,
再也不能上班,經濟亦出現困難,此刻心裏感到徬徨無助!


現今最擔心家中十多隻愛貓不知命途如何?我能力已到了盡頭。
唉﹣﹣我實在不忍心把牠們送去「漁記」或「愛協」,
因為都是不歸路,內心很是痛苦。。。


如今只懇請有心人能幫牠們一把,能從死神裡救活過來,
好讓牠們能安然活下來!

秋田【生原酒–愛在深秋】 @嵐居酒屋





友人送來一支 Sake,說頗特別及喜愛,希望我試試喜歡否。



這是一支
【生原酒】,顏色清澈,氣味淡淡的清香。




入口呷一啖,咦,很甜似的?



酒精明顯比一般 Sake 高少許,口感較濃郁。



再呷第二口,又不是那麽甜,反而是甘、滑,餘韻長久。


淨飲兩杯後,開始配以食物,看看可會相得益彰。



與魚生刺身,天婦羅,甚至羊架也配搭得宜!



飲得舒服,吃得開心,不經不覺兩人已把整瓶喝掉。



不錯的一支 Sake,美中不足是不夠清爽及香氣較薄!



但整體確是不錯,十分享受,蠻喜歡!



將會買入數支與好朋友佐膳之用。



此酒非豐厚類型,是易飲但帶點原酒風情。



若吃一口充滿油脂的食物如三文魚腩、燒羊架之類,

會大大提升此 Sake 的欣賞指數。






GEN SHU  原酒


清酒於釀成後酒精度可達19.5℃、所以酒莊會於入瓶前加入釀酒水使其酒精度降至酒精14~17℃、稱之為『割水』。
假如沒有進行『割水』即稱之為【原酒】。


而【生原酒】是一種沒有進行『火入』(加熱殺菌)及『割水』工序最新鮮的清酒。


 


秋田有許多傲視全球的自然風景與名勝地點,包括世界自然遺產「白神山地」、日本最深的「田澤湖」。再加上秋田有肥沃農地與豐富水源,稻米產量為全日本第三。秋田也被稱為「美酒王國」,盛產日本酒。而日本還有「秋田美人」的說法,據說是因為秋田有許多皮膚白晳的美人。


 


秋田釀酒的特徵是以被稱為『寒冷培養』寒冬釀造法,下雪時的空氣清新,被雪包圍的酒窖可使室內溫度保持適溫,營造出最適合釀酒的環境。在寒冬下實施的長期低溫發酵產生出芳醇美味的秋田清酒。


 


 



 















日本清酒


 


清酒日語讀音為Sake,是用大米釀製的一種糧食酒,製作方法和中國的糯米酒相似,先用熟米飯制曲,再加米飯和水發酵,不過日本清酒比中國的糯米酒度數高,但比不上蒸餾酒,最高可達到18%。


 


清酒,又稱為日本酒,簡單定義,是一種以米、麴、酵母及水為原料所生產的釀造酒。其生產技藝源自於中國黃酒,不過經日本人改良後,已成為與黃酒大不相同的東方代表性釀造酒,其口味多元的特性,足以與葡萄酒相提並論。


 


普通酒是指特定名稱以外的清酒,大部份市面流通的日本酒都是。除了白米和米麴之外,還可以加入釀造酒精,以達到酒精濃度要求,此外,還可加入糖、酒糟、酸味劑或少量化學調味料等作為副原料,當然份量不能超過米和米麴的某個百分比。特定名稱酒則是三等以上的白米,經過『精米步合』程序釀造的酒,主要分為「本釀造酒」、「純米酒」和「吟釀酒」。


 

一般稱為「白米」就是玄米除去米糠和胚芽後剩下的部份,而由於白米外側含脂肪和蛋白質,會影響釀酒時米麴的糖化程度,因此,將外層磨去剩下的「心白」部份愈少,釀出來的酒則酒香愈濃郁。這種磨去外層的程序,減少了米粒的重量,稱為「精米步合」。


加入釀造酒精 (但不得超過原白米重量的1/10)


 


本釀造


本釀造酒是指精米步合70%以下(即磨去30%以上)的米和米麴為原料,加入釀造酒精(但不得超過原白米重量的1/10),釀出來的清酒,色澤和香味都良好。如果精米步合60%以下,則稱為「特別本釀造」。


 


吟釀酒


吟釀酒是指精米步合60%以下的白米和米麴,加入釀造酒精,以低溫發酵經長時間浸泡而成的清酒,色澤特別好,米香也特別濃郁,日本人稱之為「吟釀香」。


 


大吟釀酒


精米步合50%以下的吟釀酒, 加入釀造酒精,可稱之為「大吟釀酒」,其固有香味和色澤特別良好,吟釀香被徹底的引發出來。


 


沒有加入釀造酒精


 


純米酒


純米酒則是指精米步合70%以下,只用白米和米麴為原料,沒有加入釀造酒精來提高酒精含量,所釀出來的就稱為「純米」。精米步合60%以下,則稱為「特別純米酒」。


 


純米吟釀酒


精米步合60%以下,沒有加入釀造酒精,只用白米和米麴為原料,則稱為「純米吟釀酒」,比吟釀酒的酒香更沉穩,更能體現釀酒的精神。


 


純米大吟釀酒


精米步合50%以下的吟釀酒,不加釀造酒精,做出來的「純米大吟釀酒」,更是酒中極品,酒香達至沉穩的極致,特別清香。大吟釀正是將酒米作最極限的研磨,是集結所有藏人心力來釀造的至高質素清酒。


 


 

日本清酒一般的「賞味期」是一年,但生酒則應盡快飲用,平常要儲存在冰庫裡,即使是生儲藏酒或生詰酒,也應保持低溫儲存在酒窖裡。開瓶後,清酒跟空氣接觸後,會慢慢變酸,酒質變差,香味也會漸漸流失,所以開瓶後喝不完,一定要放到冰庫裡冷藏起來。還有就是清酒絕對不能受陽光曬射,只要被照射兩三小時,酒不但變酸,還會帶有臭味。
