Thank you for your support in Tour 6  of our Discoveries Winemaker Tour 2010 where Party-loving winemaker Ludovic Boucart of Les Vins de Roisin introduced you to a wine world beyond the grape.


 We now invite you to join us in the seventh tour of our new series of ‘Discoveries Winemaker Tour 2010’, a joint programme by m.a.x. concepts, wine merchant Cottage Vineyards (International) and local wine instructor, Damon Yuen, where the visiting winemaker and Damon, will lead you to discover each month some of the world’s most exciting and unusual wines paired to a range of exquisite cuisine in various m.a.x. concepts outlets.


Our seventh tour, entitled, “Discovering Gruner Veltliner, Blauer Zweigelt, St.  Laurent and other best-kept secrets in Austrian Wine” 29-30th November, 2010, will star the wines of two top Austrian boutique wineries, biodynamic white wine specialist Nikolaihof in Wachau and premium Austrian red wine producer, Pfaffl in Weinviertel.


Austria is the home of Gruner Veltliner, one of the wine world’s most food-friendly and versatile wines, enjoyable bone dry, off-dry, sweet, young, and with age.  However, beyond this more better known, but still little known white grape, Austria produces also its own unique Rieslings arising from its steep, rocky, mineral terroirs able to hold their own against the tops Crus from Alsace and Germany, and a range of exciting red wines with their local grapes, namely Blauer Zweigelt, Blaufrankish, and St.  Laurent, that lend well to dishes ranging from tasty game birds to even seafood and all the delicacies and flavourings of Asian cuisine.


Leading this tour will be Christine Saahs, winemaker/owner of Nikolaihof, the oldest wine estate in Austria, whose history goes back almost 2000 years to Roman times.  Nikolaihof is also the first biodynamic wine estate in Europe to be given the Demeter certification.  The winery also holds high recognition for the quality of its wines.  Last year, 6 of Nikolaihof’s wines scored between 91 points to 97 points in Robert Parker’s “The Wine Advocate”.


And thus, with this tour, we will unravel the secrets of Gruner Veltliner, and other Austrian wine specialties with two special events showcasing some of Austrian’s top wines:  (1) an exquisite Japanese cuisine wine dinner and (2) a traditional Austrian cuisine wine dinner.

奧地利是Gruner Veltliner的家鄉, 而做出的葡萄酒是葡萄酒世界中其中一跟食物最為協調的佳釀, 並且千變萬化-可以是乾身,半乾身,甜酒, 新酒或陳年. 然而,除了這廣為人知的出品外,從當地的陡坡岩石、礦物質豐富的土地種出的白葡萄,釀製出奧地利獨有的Rieslings,可媲美阿爾薩斯和德國 ,此當地葡萄釀製的Blauer ZweigeltBlaufrankishSt. Laurent紅酒,十分適合配搭家禽類、肉類、海鮮及各種亞洲佳餚。

Therefore, in our current tour entitled, “Les Vins de Roisin Day and Night, Never in the Morning”, we invite you to discover a wine world beyond the grape, introducing you to the serious gastronomic wines of “crazy” visionary, party-loving Belgian winemaker, Ludovic Boucart, who after studying winemaking in the Universities of Bordeaux and Burgundy and making wine in Saint-Émilion and Puloigny-Montrachet, decided to return to his home garden in Roisin, Belgium to make serious, gastronomic fruit wines, continuing the dream of his father, Jean-Marie Boucart, who in 1993 produced the winery’s first quince wine

East Meets West Afternoon Tea & Wine (Sunday 5 September, 2010, 2:30pm – 5:30pm at Pearl on the Peak) ($398.00 / $338.00 NET per person for Cottage Vineyards and Damon's E-mail list): Ludovic dressed in elegant suit and cravate in the company of elegantly dressed men and women will lead participants through a relaxing afternoon of tea and wine. Thank you for your support in our Tour 4 in our Discoveries Winemaker Tour 2010 where Bella Ridge and the Kyoho grape allowed us to have an encore of two more nights at Kiku!


We now invite you to join us in the fifth of our new series of ‘Discoveries Winemaker Tour 2010’, a joint programme by m.a.x. concepts, wine merchant Cottage Vineyards (International) and local wine instructor, Damon Yuen, where the visiting winemaker and Damon, will lead you to discover each month some of the world’s most exciting and unusual wines paired to a range of exquisite cuisine in various m.a.x. concepts outlets.


Our fifth tour, entitled, Unravelling the mystery of the French Yellow Wine and the land of Jura” 3-4th August, 2010, will star the wines of Frederic Lornet from Jura, France’s smallest AOC region (1,800 hectares) and the producer of the mysterious Vin Jaune (Yellow Wine), made from the controlled oxidation of the Savagnin white wine.  Besides Yellow Wine, the region also hones the presence of numerous indigenous grapes such as Savagnin, Poulsard, and Trousseau that are grown almost nowhere else, and the making of wines with techniques that are found also little where else such as Vin de Paille and Macvin du Jura.


Besides uniqueness, these wines also provide exciting food experiences both with traditional Jura cuisine and also with seafood, especially with Asian condiments and flavourings.


Therefore, with this tour, we will unravel the mysteries of the Yellow Wine and Jura with two special events:  (1) all fusion seafood wine dinner and (2) a Franche-Comte wine dinner but in a modern light.


The special highlight of this tour will be the pairing of the Frederic Lornet Arbois Nature 2008 with fresh scallops in the first dinner where the fresh scallops will “magically transform” into raw oysters when paired to the wine.


Another special highlight occurs in the second wine dinner where the Frederic Lornet Vin Jaune 2000 pairs to Yellow wine chicken pot-au-feu with vanilla and wild mushrooms, spin-off from the traditional Rooster cooked in yellow wine with morels.

今次的旅程是未為新興旅遊人踏足而富神秘色彩的法國黃酒締造地 – 侏羅區。


侏羅區的Frederic Lornet是全法國的最小型擁有‘AOC’級數的地區 (1,800公頃)。在這區, 釀酒師生產出“不可思議”,像謎一般的Vin Jaune(黃酒), 是由控制氧化的技術,從Savagnin, Poulsard, 還有Trousseau 都是其他地方無法培植的。他們擁有的技術,是其他地區罕見,例如:他們所釀造的Vin de Paille(麥稈酒)和Macvin du Jura。除了獨步天下的釀酒技術外,令人感興趣的是黃酒能配搭美味的侏羅區傳統美食,也能配上海鮮和亞洲區的調味及香料,酒和美食能互相輝映,美輪美奐。

Our fourth tour, entitled, ¡§Old World Winemaking and Hands-on Innovation at Bella Ridge Estate Winery¡¨ 22-24 June, 2010, and led by winemaker Alon Arbel of boutique Swan Valley, Western Australia winery Bella Ridege Estate Winery will bring you to experience the more mellow, savoury side of Australian wine.


Alon Arbel and his wife, Jodi strongly embrace the motto that great wines begin in the vineyard.  Thus, attributing the success of their wines to the winery¡¦s terroir and the care they place in the vineyard, the couple practice Old World artisanship techniques, relying on natural yeasts and harvesting all the grapes by hand to bring out the pure varietal character of the grapes and the vineyard¡¦s blessed teroir.  Located in the Swan Valley in western Australia, which experiences a warm Mediterranean climate with very long sunshine hours and very dry weather during ripening and harvest, the location lends itself favourably to quality grapes and hence premium wines.


So in Alon¡¦s vineyards, you can find Semillon, Chenin Blanc and Shiraz planted in the 1960s by the original owners.  Also, on the property, strangely enough are 1.5 acres of Kyoho grapes (imported from Japan) planted by the previous owners, a Japanese company in the 1980s.  At the end of the 2004 vintage, Alon made a white wine out of these Kyoho grapes, an intriguing wine now reaching cult-like status able to match with fruit platters, foie gras and and sushi to light spongy Japanese style cheesecake!


The Kyoho 2006 will be one of the highlights of this tour, together with Bella Ridge Estate¡¦s savoury Chenin Blanc, Cabernet Shiraz, Shiraz, and GSM blend.  All wines from the winery¡¦s inaugural vintage, 2004, were reviewed by Australia¡¦s top wine writers ¡V James Halliday, Huon Hooke and Peter Forrestal.  Ray Jordan even proclaimed the winery Most Promising winery in Western Australia (2008 Wine Guide)!
