We invite you to join us in the third of our new series of ‘Discoveries Winemaker Tours’, a joint programme by m.a.x. concepts, wine merchant Cottage Vineyards (International) and local wine instructor, Damon Yuen, where each month, a visiting winemaker and Damon, will lead you to discover some of the world’s most exciting and unusual wines paired to a range of exquisite cuisine in various m.a.x. concepts outlets.
Our third tour, entitled, “New Old World South African Wines” 21st to 25th April, 2009, will star the wines of Clos Malverne from Stellenbosch , South Africa .
South Africa is actually more Old World than New for the following reasons:
‧ South African’s vineyards contain the world’s oldest “Old World” geology and soils dating back 500 to 1,000 million years ago (France’s soils, generally only go back 250 million years ago)
‧ Whereas New World vineyard soils are generally fertile, South African vineyard soils are highly weathered and nutritionally poor, helping to curtail plant vigour
‧ South Africa’s winemaking history stretches back 350 years dating back to 1659, largely stemming from the French and European winemaking traditions
But, these wines can also NOT be labeled “ Old World ” due to the following reasons:
‧ The region’s weather displays a southern hemisphere seasonal pattern, yielding the possibility for “fruit forward” wines, bursting with flavour
‧ In terms of winemaking, the region displays a “ New World vitality”, with little regulations and all the freedom to experiment with different grapes and wine-making techniques
In addition, South Africa is blessed with a landscape of wildflowers, lavender, and a natural vegetation called fynbos which lends to its wines smoky, garrigue characters which can only be South Africa’s own. These characteristics display amazing results when paired to the spices and herbs of the Orient.
Thus, South African wines are best described as ‘New Old World Wines’, complex mineral wines structured for elegance and food compatibility, yet expressing prominent fruit and varietal flavours, best expressed as “New Old World”.
In our tour, we have specially chosen the mineral and garrigue wines of boutique ‘New Old World’ South African winery, Clos Malverne to pair with (1) Vietnamese, (2) European continental, and (3) fusion canapes.
The special highlight of this tour will be the pairing at LAWRY’S THE PRIME RIB of the Clos Malverne Auret 2007 (60%Cabernet Sauvignon/25%Pinotage/15% Merlot) with Denningvleis Lamb, one of the oldest recorded recipes in South African cuisine combining a mix of Provence and Southeast Asian herbs and spices with western-style meat preparations.
Other noteworthy highlights include the Clos Malverne Devonet Chardonnay 2008 with Lobster and Chicken with Grapefruit and Pomelo served with a shot of Chinese Chicken Consomme infused with lemon grass.
