本課程是在「紅、白餐酒進階」的水平上加深及擴闊對
紅、白餐酒的認識及提升品嚐紅、白餐酒的技術。
   


事實上,紅、白餐酒既是帶有消閒與享受的一面,亦帶
有投資賺取高回報的價值。對紅、白餐酒的認識越多、越深,
可以帶來的享受感覺及回報將會越高。紅、白餐酒除了認知
理論及歷史外,個人對品酒的技巧亦需要一定的指導及培訓。
若只會講理論,不會品酒,算不上認識紅、白餐酒。
   


現時巿面上對紅、白餐酒的消費持續上升,因此紅、白
餐酒的投資回報亦有相當的潛力。但要作出正確的投資或入
貨決定,是需要有出色的品酒師協助,提供專業的意見。因
此,現時巿面上,無論食肆、投資公司、酒莊等都對品酒師
有一定的需求。好的品酒師更是不愁出路。
   


本課程一方面是提升用家的品酒技術,令其可更深入地
領悟品嚐紅、白餐酒的情操。另外,亦有助有意成為品酒師
的學員掌握品酒的技術。


課程內容包括:
1. 如何提升品嚐葡萄酒的技巧;
2. 認識普通葡萄酒及較優質葡萄酒的分別;
3. 深入了解葡萄酒的結構及分辨葡萄酒的質量;
4. 品嚐多個國家不同地區、不同葡萄品種的葡萄酒;
5. 品嚐及認識較優質的紅酒、白酒、汽酒。
   


本課程適合對紅、白餐酒有一定認識或有意從事品酒行
業之人士修讀。
  入學資格:年滿18歲或以上,曾修讀本中心『紅、白餐
            酒(二)進階』或對紅、白餐酒有一定認識之
            人士

Thank you for your support in our Discoveries Winemaker Tour 2010, a joint programme by m.a.x. concepts, wine merchant Cottage Vineyards (International), and celebrated local wine instructor, Damon Yuen. We have now reached half-time in this year’s tour. Thus, to celebrate in this sixth tour, we propose a dramatic breakthrough in terms of wines, food pairings, and wine events.

Therefore, in our current tour entitled, “Les Vins de Roisin Day and Night, Never in the Morning”, we invite you to discover a wine world beyond the grape, introducing you to the serious gastronomic wines of “crazy” visionary, party-loving Belgian winemaker, Ludovic Boucart, who after studying winemaking in the Universities of Bordeaux and Burgundy and making wine in Saint-Émilion and Puloigny-Montrachet, decided to return to his home garden in Roisin, Belgium to make serious, gastronomic fruit wines, continuing the dream of his father, Jean-Marie Boucart, who in 1993 produced the winery’s first quince wine

East Meets West Afternoon Tea & Wine (Sunday 5 September, 2010, 2:30pm – 5:30pm at Pearl on the Peak) ($398.00 / $338.00 NET per person for Cottage Vineyards and Damon's E-mail list): Ludovic dressed in elegant suit and cravate in the company of elegantly dressed men and women will lead participants through a relaxing afternoon of tea and wine. The farm is situated in the nunicipal territory of Offida (Contrada Ciafone, 106). This zone in the Marches region can be considered the heart of the production of the Rosso Piceno Superiore, Falerio dei Colli Ascolani and Offida DOC wines.

Arnaldo Caprai is considered as the best producer of top quality Sagrantino di Montefalco.

Giuseppe Rinaldi


Rinaldi is a “small” producer in terms of amount of bottles produced, but heirs of “great” wine dynasty. He makes even less wine than Giacomo Conterno. Giuseppe Rinaldi's Barolos stress power and purity of fruit.


Giuseppe Rinaldi's Barolos are wonderful, but he also makes fine Barbera, Dolcetto, and Freisa.

Grape: 100% Barbera


The 2004 Giuseppe Rinaldi Barbera d'Alba has rich, tart cherry aromas and flavors and excellent acidity.


 


Ø        Giuseppe Rinaldi, Barolo Brunate-Le Coste DOCG 2001 (RP93)


Grape: 100% Nebbiolo


Le Coste is a special section of the Brunate vineyard in La Morra that Giuseppe Rinaldi particularly favors.  Rinaldi makes classic traditional Barolos - not a barrique in sight in his winery.  The 2001 Brunate-Le Coste has rich, intense aromas and flavors of tar, licorice, and red berries. It is well balanced, and has all the makings of a great Barolo.


 


Azienda Agricola F.lli CIGLIUTI

The Fratelli Cigliuti winery is situated on the Serraboella hill, 350 metres above sea level, overlooking the village of Neive, in the Langhe region of Piemonte, N.W. Italy. Neive is one of the three villages responsible for producing Barbaresco from the Nebbiolo grape.

Grape: 100% Nebbiolo


Nebbiolo grape from the Serraboella Cru, aged in used barrique and big barrels. Young wine, with sensible tannins, with gentle nose of wood.


 


Massolino


A century of work, four generations and an immense love of their land. The Massolino family has always made their wine in Serralunga d’Alba, at their home. They are now recognized as one of the major producers of Barolo.

Grape: 100% Moscato Bianco


 “Massolino does so many things well, and the 2008 Moscato d’Asti is no exception. This engaging Moscato offers up ripe pears, crisp apples, flowers and spices with terrific focus, energy and vibrancy. 2005 Pavillon Blanc du Château Margaux


A wonderful Bordeaux white (100% Sauvignon Blanc).


Very floral, lovely aromas of tropical fruits, vanilla and honeydew. Rich and creamy in the month. Well balanced with a lengthy pleasing finish.




2006 Opus One Overture


This wine produced from the classic Bordeaux varieties: Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot and Malbec.


Nice deep purple color. Nose of plum, cherries and raisins with some spice.


A layered and complex wine and well structured.
