Thank you for your support of this fourth tour in our Discoveries Winemaker Tour 2010 programme series.  We have now SOLD OUT all the tickets for the Tuesday 22 June, 2010 dinner Kyoho at Kiku Japanese Cuisine Winemaker Dinner.  Thus, we now add one ADDITIONAL night of Wednesday 23 June, 2010 with the Thursday 24 June, 2010 Savoury Australian Cuisine, Savoury Australian Wines Winemaker Dinner staying unchanged.


Thus, we now invite you again to join us in the fourth tour of our new series of ¡¥Discoveries Winemaker Tour 2010¡¦, a joint programme by m.a.x. concepts, wine merchant Cottage Vineyards (International) and local wine instructor, Damon Yuen, where each month, a visiting winemaker and Damon, will lead you to discover some of the world¡¦s most exciting and unusual wines paired to a range of exquisite cuisine in various m.a.x. concepts outlets.


Our fourth tour, entitled, ¡§Old World Winemaking and Hands-on Innovation at Bella Ridge Estate Winery¡¨ 22-24 June, 2010, and led by winemaker Alon Arbel of boutique Swan Valley, Western Australia winery Bella Ridege Estate Winery will bring you to experience the more mellow, savoury side of Australian wine.


Alon Arbel and his wife, Jodi strongly embrace the motto that great wines begin in the vineyard.  Thus, attributing the success of their wines to the winery¡¦s terroir and the care they place in the vineyard, the couple practice Old World artisanship techniques, relying on natural yeasts and harvesting all the grapes by hand to bring out the pure varietal character of the grapes and the vineyard¡¦s blessed teroir.  Located in the Swan Valley in western Australia, which experiences a warm Mediterranean climate with very long sunshine hours and very dry weather during ripening and harvest, the location lends itself favourably to quality grapes and hence premium wines.


So in Alon¡¦s vineyards, you can find Semillon, Chenin Blanc and Shiraz planted in the 1960s by the original owners.  Also, on the property, strangely enough are 1.5 acres of Kyoho grapes (imported from Japan) planted by the previous owners, a Japanese company in the 1980s.  At the end of the 2004 vintage, Alon made a white wine out of these Kyoho grapes, an intriguing wine now reaching cult-like status able to match with fruit platters, foie gras and and sushi to light spongy Japanese style cheesecake!


The Kyoho 2006 will be one of the highlights of this tour, together with Bella Ridge Estate¡¦s savoury Chenin Blanc, Cabernet Shiraz, Shiraz, and GSM blend.  All wines from the winery¡¦s inaugural vintage, 2004, were reviewed by Australia¡¦s top wine writers ¡V James Halliday, Huon Hooke and Peter Forrestal.  Ray Jordan even proclaimed the winery Most Promising winery in Western Australia (2008 Wine Guide)!

現在我們熱情地邀請閣下參加最新系列的釀酒師巡迴演奏旅程四,是由美心集團旗下的m.a.x. concepts、村鄉葡萄園(國際)有限公司及葡萄酒培訓講師袁大文?手合辦,每月都會邀請世界各地不同的釀酒師蒞臨香港,與各位一起欣賞他們與別不同的葡萄酒之餘,及享受m.a.x.  concepts旗下餐廳的精美佳餚配搭。

以色列藉的Alon Arbel和妻子傳奇地放棄了工程師的工作成為釀酒師,雙雙?手堅持以舊世界的技術,利用野生酵母菌及人手採集葡萄的方法在天鵝河谷內奮鬥出新天地,在喫而不捨的努力下,在當地成功種植出20年生的巨峰提子製作成佳釀,並受到擁戴它的紅酒愛好者追捧。


今次我們進入西澳洲地利亞於622,23日的晚上,我們精心挑選不同地域的日式烹調,有沖繩的燉煮、鹽燒香草雞軟骨雞腎串、西京燒銀雪魚、天婦羅拼盒、等等,配以日本藍莓軟芝士蛋糕,一系列溫暖人心的組合;


624日晚上,是以澳洲美食吞拿魚鮮,塔斯曼尼亞三文魚、片燒袋鼠肉、澳式烤羊脾、燴鴯?,海陸空匯集與‘BELLA RIDGE’美酒併發出美輪美奐的配搭。
