REFOSCO


Refosco is an ancient red grape varietal with a murky history and is heavily planted in Italy’s Friuli-Venezia Giulia. Refosco (also known as Cagnina and Terrano) can produce high-quality, deeply colored wines with concentrated flavors reminiscent of tart plums and a slightly bitter finish. But it can also have high Acidity if grapes aren’t fully ripened.


In California, there is a variety called Refosco that is related to Mondeuse but not to samples of the Italian Refosco that were available for DNA testing.



DOLCETTO


Red grape variety widely grown in the Piedmont region of northwest Italy. The name translates to "little sweet one," though it is nearly always a dry wine. Dolcetto wines can be tannic and fruit driven with moderate levels of acidity. They are typically meant to be consumed one to two years after release.


 










In 1994, Sassicaia was granted a unique distinction of having the only DOC dedicated to a single wine (Bolgheri Sassicaia DOC).


1994 and younger use the Bolgheri Sassicia DOC.


1993 and older are labeled simply as table wines, Vino da Tavola.









ARNEIS PASSITO BRIC DU LIUN


Thebric du liunvineyard, where bric means the top of a hill in the local dialect and liun means lion, historically identifies the small vineyard that has always been in the Deltetto family.


The splendid position permits grapes of excellent quality, and the low production due to the thinning out process, over-maturing in the vineyard, drying in small wooden boxes in the open air and a bit of noble mildew make a nectar that is well concentrated and captivating but with an acidity that never allows it to lose its charm.


VINE: 100% Arneis


PASSITO


An Italian term used both for a method of making sweet wines and for the sweet wines made this way. Passito wines begin by laying freshly picked grapes on mats (or hanging them in bunches) so that they can partially dry.


This process eliminates much of the grape’s water and concentrates its sugar and flavor components. When the grapes are crushed and fermentation begins, the sugar content is usually high enough to take the wine to a reasonable alcohol level and still end up with enough residual sugar to make these wines fairly sweet.

  7. Hi, I understand that you have ordered wines from Cathay Way before. May I know which shipping company you use (and the contact details if possible) for shipping the wines back to Hong Kong? Cathay Way has obtained a quotation for me from Fedex and it's EUR238 a case which i think is a bit pricey so I want to know if there is any cheaper option. Thanks so much!
